Sometimes, toward the end of the week I have to get creative with my lunches because, a) I’m bored with the salad or sandwich I’ve been making all week or b) I am running low on ingredients and have to figure out a way to use what’s left.
That’s how I came up with this little concoction: Red Beet Salad Wrap
I didn’t have enough beets or lettuce to make a salad so I decided to use what I had to make it into a delicious wrap.
I took a whole wheat wrap and spread hummus on it, sliced some cucumbers and beets.
Added my favorite ingredient of all time, avocado and some red onions to give it some spice.
Then, I loaded it with what lettuce I had left...
And, tada -- my lunch was made!
So good! I love when I get a happy surprise by using what's left in my fridge.
